Call me naive but when I first saw the term ‘twice cooked’ on a menu, I thought to myself “OK, they’ve probably got an apprentice chef, and he didn’t get the chips right on the first go”.
Well when i read this i thought it was a Rick Stein's journey through where ever, very interesting though Given that my new breville bench oven bakes chips to a crispy no nonsense texture with out the oil is a very simple one stage process starting with laying the frozen items (Chips) out on a grill rack and viola 12 min later they are on the dinner plate, Very healthy and speedy.
